Ginger has a very low glycemic index (GI). This means that low GI foods break down slowly to form glucose. They do not trigger a spike in your blood sugar levels (as high GI foods do). Gingerols are the major active ingredients in ginger. They increase delivery of glucose into your muscle cells without using insulin.
